Almond Cookies

These soft short bread type cookies are a family favorite. They are typically made with lard in China but I have used unsalted butter. It doesn’t affect the taste of these delicacies at all.

Makes about 60

Preparation Time: 20 minutes

Cooking Time: 12 - 13minutes

Ingredients:

Unsalted butter 8 oz

Plain flour 10 oz

Baking powder 1 tsp

Almonds (blanched) 3oz

Egg 1

Almond or vanilla essence few drops

Caster sugar 4 oz

Dark brown sugar 2 oz

Milk 2 tbsp

Egg yolk 1

Method:

Preheat oven at 180 degree Celsius.

Lightly grease the baking tray.

Sieve together the flour and baking powder for two times so the air passes through the flour.

In a bowl, beat butter and caster sugar.

Add brown sugar and beat until fluffy.

Add egg and essence, beat well.

Now combine the cream mixture with the dry one using a spatula.

Then take out the mixture on a surface with a bit of dry flour on it. Roll into small balls. Press each ball with a thumb.

Mix the egg yolk and milk to make an egg wash and brush each cookie with it.

Place a blanched almond on top and bake for 12-15 minutes.
